  • Description:
    Some types of cheese have as characteristic the formation of little holes that are smooth and shiny, as is the case of Gouda, Edam, Steppe, Emmental and Gruyère cheeses.
    These little holes are formed by the production of carbon dioxide, obtained by the fermentation of calcium lactate.
    To obtain these little holes, specific conditions of pH, salt content, oxygen level and maturation temperature are necessary.
    Typically, Ferment BV - Propionic is applied in combination with other lactic cultures.
